Super healthy and tasty almond cookies

I love baking these almond cookies on weekends, especially when friends and family come around. They are easy to make, very tasty and healthy as well. It’s a real treat that tastes good and makes you feel good too!

1/4 cup Almond or Coconut milk
1/2 cup Coconut palm sugar
1/3 cup Coconut oil
1/3 cup Almond butter
1/4 cup Maple syrup
1 Egg
2 teaspoons Vanilla
1 cup Almond Flour
3 tablespoons Coconut Flour
1 table spoon Baking soda
1/2 teaspoon Sea salt

For non-diary milks, I always choose the brand Ecomil because they contain good quality ingredients and there is a large variety of different blends to choose from. When baking I tend to go with the Almond Vanilla flavour or their Coconut milk options.

Mix all the ingredients together and top with your choice of toppings. Here, I choose edible flowers but chocolate chips are also one of my favourite options.

Bake in a preheated oven for 8-10 minutes at 200 degrees centigrade.

The cookies, once they come out of the oven, are soft and chewy, sweet and moorish!

I challenge you to make your batch of cookies last all weekend! Usually they disappear in one afternoon.
